The wine was bottled after 9 months barrel maturation. Natural fermentation, punch downs 4 times a day, wine kept on skins a week after fermentation. Pressed and went to old barrels for 9 months. Bottled by hand on the farm.
The 61yr old Grenache is from a single block that is on well drained, decomposed sandstone. The vines are all bush-vine and unirrigated. All farming is done organically. Yields are 3-4 tonne per hectare.
